BBQ Duck Breasts Free

A delicious addition to any BBQ.  These skewers are quick to cook and taste amazing.

Plan for 1 duck breast per person.

 

Ingredients – Serves 2 

 

  • Two duck breasts
  • 8 Bamboo skewers (soak them in water for a good hour prior to use)
  • 1 1/2tbsp Sesame oil
  • 3 tbsp Teriyaki Sauce
  • 3 tsp Mirin Sauce
  • 1 1/2 tbsp Tomato Paste

Method

  1. Pull the skin off the duck breasts and slice the meat lengthways into four long strips of meat.
  2. Mix the marinade ingredients together in a shallow bowl and give a good whisk.
  3. Marinade the duck for at least an hour, ideally 3, but you can get away with an hour.
  4. Soak your bamboo skewers in water for an hour, if you are using metal skewers just be sure to wear an oven glove when turning them over.
  5. Thread the duck onto the skewers and pop them on a hot BBQ for 8 minutes in total, 4 per ‘side’.
  6. You can do these under a hot grill as well, they take about 6 minutes with a hot grill (assuming you want them pink).
  7. You can substitute with gluten free Soy Sauce with a tsp of honey if you don’t have any Teriyaki Sauce to hand.
