This session will focus on a subject affecting every part of our industry! Reducing the carbon footprint when managing cleaning, and food waste.  Sustainability and the changing requirements around packaging and recycling is key in our current climate .

Alongside practical presentations, case studies & panel session, there will be plenty of opportunity to network, exchange ideas and discover solutions that could help your organisation reduce waste, improve efficiency and prepare for future changes.

Our Theme: Practical solutions for food waste, plastics, cleaning and resource efficiency

Wastage across your business is no longer simply an environmental issue. It affects operating costs, compliance, purchasing, menu planning, waste collections, staff practices and an organisation’s wider sustainability commitments.

Our speakers will explore what businesses and public-sector organisations are already doing, practical solutions available to the hospitality industry and some of the regulatory changes businesses need to start preparing for.

  • Reduce food waste and costs
  • Improve cleaning and resource efficiency

Speakers

Profile image1. How is the NHS tackling food waste? – Philip Shelley | NHS England

We are delighted to welcome Philip Shelley, who will share insight into how food waste is being addressed across the NHS.

With food being produced and served at significant scale across healthcare, reducing waste requires collaboration across procurement, catering, clinical teams and operational services.

Philip will look at some of the work taking place within the NHS, the challenges faced when managing food waste in complex organisations and the lessons that hospitality and food-service businesses can take from this approach.

2. Turning Food Waste into a Resource – Sylvie Verinder MCIWM | Tumblebug

Sylvie Verinder from Tumblebug will explore practical solutions for managing unavoidable food waste and how technology can help businesses rethink what happens to waste once it leaves the plate or preparation area.

Tumblebug’s Ecobot technology processes organic waste on site, reducing its volume and converting it into a dry soil-conditioning material.

The session will look at how businesses can:

  • Reduce the volume of food waste requiring collection
  • Understand the financial impact of their current waste-management arrangements
  • Explore alternatives for unavoidable food waste
  • Use waste data to support sustainability and ESG reporting
  • Move towards a more circular approach to waste management

Sylvie will give a case study example Blenheim Palace

We are also looking to include a hospitality case study demonstrating how a large visitor attraction is approaching food waste in practice.

A interactive panel session of our speakers and sponsors to share best practice and knowledge within the room.

3.  Do you understand what drinks businesses need to do under the Deposit Return Scheme from 1 October 2027.

What’s Happening with Plastics and the Deposit Return Scheme? Link

Our second session will turn the focus to plastics, packaging and the forthcoming Deposit Return Scheme (DRS).

The Deposit Return Scheme is scheduled to come into operation in England and Northern Ireland from 1 October 2027 and will introduce a refundable deposit on certain single-use drinks containers.

For hospitality operators, retailers, drinks suppliers and other businesses, understanding how the scheme may affect purchasing, charging deposits, on-site consumption, takeaway sales and the handling of empty containers will become increasingly important.

We’ll explore:

  • What the Deposit Return Scheme is
  • Which drinks containers are expected to be included
  • What it could mean for hospitality and food-service businesses
  • On-site consumption versus takeaway sales
  • Collection and storage considerations
  • The wider direction of travel for reducing single-use packaging
  • Practical steps businesses can start considering now
