From kitchen to certification

From kitchen to certification

By Hayley Cooper  |  Co-Founder & Global Operations Director, Vegan Hospitality

When we talk about food safety, we often focus on what is present in a dish. At Vegan Hospitality, we believe the more powerful question is: what have we consciously left out, and how transparently can we communicate that to our guests?

For the millions of people globally who live with food allergies, intolerances, or dietary requirements, eating out is rarely a relaxing experience. It involves careful interrogation of menus, sometimes anxious conversations with staff, and a degree of trust that can feel precarious. Definitely not how anyone wants to feel when they are eating out or on holiday. For vegan travellers, the challenge is compounded: they need assurance not just on individual ingredients but on an entire philosophy of sourcing and preparation, for example – are the chips fried in the same fryer as the fish?

This is the problem Vegan Hospitality was founded to solve, and why our hotel certification programme exists.

What does it mean to be a certified vegan hotel?

Our certification is not simply a badge for establishments that offer a plant-based meal option, we set the global standard for the vegan guest experience. After third-party verification we provide hotels with our signature staff training video, as well as continued support throughout the year on the topics that matter most to them, and their customers.

Allergen awareness in a plant-based kitchen

It is a common misconception that vegan food is automatically safe for those with allergies. This is not the case. Nuts, seeds, soy, gluten and other major allergens are frequently present in plant-based cooking. What a vegan kitchen does offer, however, is an opportunity to build allergen awareness into its DNA from the very beginning, rather than retrofitting it as an afterthought.

At Vegan Hospitality, we train our certified partners to approach every recipe with the same question: who is going to eat this, and what do they need to know? That means clear labelling, knowledgeable staff and menus that guests can trust completely.

To illustrate what this looks like in practice, here is one of our favourite dishes, a beautifully simple recipe that showcases how plant-based cooking can be both indulgent and genuinely inclusive.  Link (See recipes)

Why recipes like this matter for hospitality

When a chef or hospitality team commits to transparency about every ingredient they use, they are not just protecting guests from allergens. They are creating an environment of genuine trust. This recipe captures something we see across all of our certified properties: inclusive dining does not require complexity. It requires intention. And intention, at scale, requires a standard. This dish is straightforward – just five ingredients and one pan!

That trust is what Vegan Hospitality is built on. Our certified hotel partners understand that for allergy-aware guests, the value of a stay is in the confidence that someone, at every stage of the process, has thought carefully about their needs.

As the vegan hospitality sector continues to grow globally, we see exciting changes in both plant-based dining and allergy-safe environments. Certified vegan properties are, by their nature, better positioned to provide the transparency that allergy-aware travelers deserve. And the food, as this recipe shows, is extraordinary.
