Dominic Teague – One Aldwych
Learn how One Aldwych introduced a gluten- and dairy-free menu without even telling customers at first and saw bookings rise by 25% in six months, with continued annual growth. Dominic will guide you through adapting mains, batters, condiments, and desserts, including his dairy-free béarnaise using rapeseed oil, for greater inclusivity and cost savings.
Claire Clark MBE – International Pastry Chef & Consultant
Claire will introduce you to natural plant-based thickeners, egg and dairy alternatives, sugar and flour substitutes, and more. You’ll taste, test, and recreate some of her signature desserts using healthier, FreeFrom ingredients like buckwheat, seeds, and puffed grains.
Lee Maycock FCGC – Founder, UCFF & Head of Tewinbury Cookery School
Lee will lead a session on reinventing Afternoon Tea, comparing fresh ingredient bakes to ready-made mixes (courtesy of Middleton’s Foods) to achieve consistent, inclusive results without compromising on quality or taste.
John Feeney – Founder, UCFF & Culinary Innovator
