Ingredients
- 1 medium sweet potato
- 1/2 cup coconut milk
- 1/2 tsp cinnamon
- Pinch of salt
Optional
- Add blended strawberries
- Add blended blueberries – blueberries are ideal
Method for the Sauce
- Peel the sweet potato and cut into 1/2inch pieces.
- Fill a saucepan with one inch of water. Place the sweet potatoes into a steamer basket in a saucepan and steam until a tender (about 12 minutes).
- When it is cooked, add the sweet potato, coconut milk, cinnamon and salt in a blender and blend until smooth (or if you prefer it chunkier blend for less time).
- Serve hot or cold, and for older children serve with berries or coconut flakes.
