Sweet Potato Pudding

Ingredients

  • 1 medium sweet potato
  • 1/2 cup coconut milk
  • 1/2 tsp cinnamon
  • Pinch of salt

Optional

  • Add blended strawberries
  • Add blended blueberries – blueberries are ideal

Method for the Sauce

  1. Peel the sweet potato and cut into 1/2inch pieces.
  2. Fill a saucepan with one inch of water. Place the sweet potatoes into a steamer basket in a saucepan and steam until a tender (about 12 minutes).
  3. When it is cooked, add the sweet potato, coconut milk, cinnamon and salt in a blender and blend until smooth (or if you prefer it chunkier blend for less time).
  4. Serve hot or cold, and for older children serve with berries or coconut flakes.
