Asparagus Chicken
Ingredients
- Butter for frying
- 2 chicken breasts, sliced
- 1 sliced onion
- A bunch of asparagus
- 2tsp whole grain mustard
- 2tbsp Natural Yogurt
- Salt & Pepper
Method for the Sauce
- Melt the butter in a large frying pan.
- Add sliced chicken and sauté for 3/4 mins.
- Add sliced onion and cook for a further 5 mins.
- Add the whole grain mustard & coat the chicken.
- Add asparagus & season to taste.
- Add the natural yogurt and top up with a little water.
- Allow to simmer for a further 3/4 mins until slightly reduced.
- Serving suggestion: peppered sautéed kale & steamed broccoli
