Asparagus Chicken

 

Ingredients

  • Butter for frying
  • 2 chicken breasts, sliced
  • 1 sliced onion
  • A bunch of asparagus
  • 2tsp whole grain mustard
  • 2tbsp Natural Yogurt
  • Salt & Pepper

 

Method for the Sauce

  1. Melt the butter in a large frying pan.
  2. Add sliced chicken and sauté for 3/4 mins.
  3. Add sliced onion and cook for a further 5 mins.
  4. Add the whole grain mustard & coat the chicken.
  5. Add asparagus & season to taste.
  6. Add the natural yogurt and top up with a little water.
  7. Allow to simmer for a further 3/4 mins until slightly reduced.
  8. Serving suggestion: peppered sautéed kale & steamed broccoli
